What are some more things I can make with leftover manicotti cheese-meat mixture?

You could make croissant dough, roll it out, and cut it into rectangles, then put the cheese-meat mixture into it, and fold it into triangles, and bake. Serve with a marinara dipping sauce. You could also use phyllo dough instead, if you want. Or, you could get wanton wrappers, and make ravioli, then bread and fry them.
