I was ticketed for speeding, but the officer made an error on my ticket, should I fight it?

Scion is a Toyota brand, so the ticket is correct. Still if you want to fight it, you can exploit the error. Plead not guilty and set a trial. At the trial, examine the cop and get him to testify that he is absolutely certain that you were the driver and that you were driving a Toyota at that place and time. Then, show him a picture of the car and have him testify that is the car, but that it is not a Toyota. In most cases that ploy will not work and the judge will not care. There are some judges, however, that are desperate to find ways to acquit people. If you get such a judge, and if the cop follows the script, you might be found not guilty.
